Mashed Sweet Potato and Kale Puffs
Who is excited for Thanksgiving? I always look forward to spending time with family and eating ALL THE yummy food! While I've yet to try to cook a turkey, I do have a recipe that all of us beginner cooks can tackle this coming holiday!
I was trying to come up with an easy pinterest worthy side dish for this upcoming thanksgiving because side dishes are part of the whole thanksgiving experience (and an easy way to contribute to dinner when you're not a pro chef lol) I saw a few recipes online that used puff pastry and brainstormed how to make a thanksgiving side using puff pastry? So this is how I came up with this delicious dish!
It's basically mashed sweet potato that has sauteed kale mixed in, stuffed into a puff pastry cup and finished off with some cheese and baked til crispy! It turned out sooo good and is vegetarian friendly :D

Mashed Sweet Potato and Kale Puffs
Makes 18 cups
2 sheets of puff pastry, thawed
2 large sweet potatoes, peeled and boiled
1 tsp olive oil
3 cups of shredded kale
3 cloves of garlic
pinch of salt
pinch of pepper
1 1/2 C of shredded cheese (I used Cheddar)
1. Boil the sweet potatoes until done and mash in a large bowl, add a pinch of salt and pepper to the mashed potatoes.
2. Meanwhile, saute the kale in a pan with olive oil and the 3 gloves of garlic (I just smashed each clove with the flat edge of a knife. You will need to take the garlic out after, so keep them in big pieces). Saute the kale for about 5-7 minutes, until kale is all wilted and softened. Add the cooked kale (remember to remove the garlic!) to the mashed sweet potato and mix to combine.
3. Unfold the puff pastry sheets and cut each sheet into 3 rows, then each row into 3 squares using a sharp knife. Line a muffin tin with the pastry squares, molding them into little puff pastry cups. Bake the pastry for about 10 minutes, or until golden brown. Then take the puff pastry out of the oven and spoon the mashed potato and kale mixture into each puff pastry cup. Finish off with a sprinkle of cheese over each cup (I used cheddar) and return to the oven to bake for another 8-10 minutes or until the cheese is nice and melty! That's it, it is best served warm so get them onto your Thanksgiving table to serve, devour and enjoy!!!
